As someone who can fly, I would gladly support the server a little by buying /fly for say 1 euro per hour for the whole servers (as long as it wasn't announced because I don't want 100 people pm me in game "buy fly plzzzzzzzzzz").

The problem is that in-game features of any kind cannot be sold in compliance with the EULA, even if it's for everyone. Flying is the property of Mojang, it's something included in the game (just not in survival mode), and you can't sell their property. Period. Any server that is doing that now (yes there are a lot) is risking a trip back to the blacklist.
